Dancing Bull, the playful side of Rancho Zabaco, is committed to offering distinctive varietals from the very best wine growing regions of California.
Tasting notes
The wine is crisp and clean with bright grapefruit notes balanced by tropical fruit and a hint of herbaceousness. The nose is filled with aromas of green apple, kiwi, lime, and peach highlighted by notes of green bell pepper. The mouth is very juicy, full of tropical and citrus flavors.
Wine maker notes
The 2003 Dancing Bull Sauvignon Blanc was made using grapes from the best coastal regions in California, primarily from California’s Central Coast and Lake Counties. The grapes were gently whole-cluster pressed to maximize the fruit’s varietal characteristics and citrus flavors. The juice was cold settled in order to give the finished wine elegance and balance. The wine was fermented in stainless steel and both filtered and fined prior to bottling.
